Fiesta Salad

What you need:

  • 113g Brown Rice
  • 170g Fresh Broad Beans
  • ½ Red Pepper
  • ½ Orange Pepper
  • 200g Reduced Fat Cheese
  • 113g Black Grapes
  • 3tbsp French Dressing
  • Chopped Parsley

Cooking Directions:

Rinse the brown rice in cold water before cooking for 30 minutes.

While the rice is cooking, deseed and dice the red and orange peppers.

Chop the black grapes in half and remove the seeds.

Grate or chop the reduced fat cheese into small cubes.

Once the cooked rice has been left to cool in a salad bowl, add the chopped peppers, cheese, grapes and fresh broad beans and stir well.

Pour 3 tbsp of French Dressing over the prepared ingredients, garnish with the chopped fresh parsley and serve.
