Tofu & Mushroom Stir Fry

What you need:

  • 2tbsp olive oil
  • 2 cloves of chopped garlic
  • 4 chopped spring onions
  • 1 red or green pepper (cored, seeded & diced)
  • 1 small cauliflower (broken into flowers)
  • 115g button mushrooms
  • 1tbsp sherry
  • 1 small can of sweetcorn
  • 4 cakes of tofu
  • Dried parsley

Cooking Directions:

Gently heat the oil in a frying pan and cook the chopped garlic and spring onions for 2 minutes.

Next add the diced pepper, cauliflower and mushrooms and cook for a further minute.

Now stir the tablespoon of sherry into the mixture and cook on a low heat for 1 minute. If the mixture starts to dry out then simply add a little water.

Next you need to add the small tin of sweetcorn and tofu pieces. Stir the ingredients well and cook for another minute.

Finally place the finished dish onto a warmed serving plate and sprinkle the dried parsley over the top. Serve hot!

If you want to make this healthy dish a little more substantial, try serving it up with some brown rice.
